Ingredients

1 person (2 crepes)
  • 1/2red onion finely sliced
  • 1 clovegarlic
  • 200 gmushrooms (I used baby portobello) chopped
  • 2large handfuls spinach
  • 1/2 tspfinely grated nutmeg
  • Dasholive oil
  • Salt/pepper seasoning
  • Sprinkling Parmesan cheese
  • 2crepes / pancakes

Steps

    Finely slice the onion, finely chop the garlic and add to a frying pan over a medium/low heat with a splash of oil.

  2. 2

    Once soft, add the mushrooms
    And cook until soft. Then add the spinach and cook until wilted.

  3. 3

    Add the nutmeg and seasoning. Then remove from the pan and set aside until ready to use.

    Once your crepe/pancake is cooked, add half of the mixture to one half of the crepe and top with Parmesan cheese. Fold the other half over the top of the mixture and cook for 20-30secs on each side. Then serve.
