Banana Chocolate Cake Baked in a Frying Pan

I wanted to create a low calorie cake that can be made in a frying pan using Lakanto (100% natural sweetener)! The top surface comes out crispy, with a moist cake base. It can be made in no time, so its good for breakfast or a snack.

Be careful not to burn yourself when putting the bananas into the frying pan. The batter will cook evenly if spread in a thin, even layer. By using two bananas to pack the bottom of the frying pan, they won't shift as much when pouring in the cake batter. Serve with whipped cream to taste. Recipe by Ro-zuminto

Ingredients

  • 80 gramsA: Cake flour
  • 20 gramsA: Cocoa powder
  • 1 tspA: Baking powder
  • 1B: Egg
  • 4 tbspB: Milk
  • 30 gramsB: Lakanto S (100% natural sweetener)
  • 1 tbspB: Olive oil
  • 25 gramsButter
  • 20 gramsLakanto
  • 1to 2 Bananas

Steps

  1. 1

    Sift together the A ingredients (flour, cocoa powder, and baking powder).

    Combine the B ingredients (egg, milk, Lakanto sugar, and olive oil) and mix together.

    Stir in the A mixture to the B mixture, a little at a time, then mix together.

    Heat a frying pan, and add the Lakanto to melted butter.

    Remove from heat when the Lakanto dissolves.

  6. 6

    Put sliced bananas into pan. Be careful not to burn yourself since the butter is hot.

    Pour in the batter, and evenly spread it out.

    Cover with a lid (or with aluminum foil), and steam bake for about 10 to 15 minutes on low heat.

    When a skewer inserted to the middle comes out clean, it's ready. Upturn the frying pan onto a platter.
