My mother taught me this recipe.
Since it's a simple, basic Japanese dish, I'm posting it as a record for my daughter.

Steps

  1. 1

Carefully rinse the spinach, immerse in boiling water, parboil briefly, then dunk in chilled water.

  2. 2

Once the spinach cools, squeeze out the excess water, then chop into 3-5 cm lengths.

  3. 3

Combine the ☆ ingredients, add chopped spinach and toss, then serve.

  4. 4

Here's a tip! The oxalic acid that produces the bitterness of the spinach disappears when parboiled.

  5. 5

Apparently, if you take in a large amount of oxalic acid, it can accumulate in your body and bind with calcium, so you may become at risk of stone formation or osteoporosis, but...

  6. 6

...there's no way you can consume massive amounts of spinach at one time, and by simply parboiling it in a generous amount of water, you'll be fine!
