This is a recipe my grandmother taught me.

Grandma's Recipe for Spinach Shira-ae

Ingredients

2 servings
  1. 1 bunchSpinach
  2. 1/2 block● Silken tofu
  3. 2 tbsp● Ground sesame seeds (white)
  4. 1/4 tspSoy sauce
  5. 1/2 tsp● Salt
  6. 1 pinchSugar
  7. 1Bonito flakes

Cooking Instructions

    Wrap the tofu in paper towels, and let it sit in the refrigerator for 30 minutes to drain excess water.

    Rinse the spinach well, then parboil for 2 minutes in a generous amount of boiling water, dunking the stalk in first (For those who dislike the taste of the pink part of the stalk, remove it. It's edible if well-rinsed. It's actually quite tasty!)

    Once the spinach is parboiled, chill in cold water, squeeze out any excess water, then cut into 5 cm lengths.

    Put the spinach from Step 3 into a bowl, then toss with the ● ingredients. Mash the tofu with your hands and mix it well with the spinach.

    Add salt (not listed) to taste, then serve.

    You can also cook the spinach in a microwave by wrapping it in plastic wrap after rinsing!
