Breakfast is the most important meal of the day.We should always try to have enough protein and carbohydrates and fibres for the healthy starting of the day. Hence I made this double egg delicious masala omelette with lots of veggies and served with sauted potato wedges and vegetables.

Breakfast is the most important meal of the day.We should always try to have enough protein and carbohydrates and fibres for the healthy starting of the day. Hence I made this double egg delicious masala omelette with lots of veggies and served with sauted potato wedges and vegetables.
Steps

Wash and chop vegetables in small cubes. I used red and green bell peppers, tamatoes and green chillies.

Also chop onion and coriander leaves.

Break 2 eggs to a mixing bowl and beat for 3-4 minutes to become the mixture foamy.

Add in chopped vegetables except onion and green chillies.

Now add all the spices like red chilli powder, termaric powder, garam masala powder and salt.

Mix well and then add in 1 table spoon of milk. Mix again.

Heat a flat non-stick pan with 1 tablespoon of butter.

Add in chopped onion and green chillies and saute for a minute or until onion becomes soft and flavourful.

Next pour in the egg mixture and swirl the pan to spread the mixture evenly. Try to make a thin layer.

Cover and cook in low heat until the mixture sets and changes colour.

Flip the omelette carefully and cook for a couple of mitures more to cook evenly from both sides. Dont overcook. Omelette tastes best if it is little soft from inside.

Now flip again and sprinkle some cheese of your choice on one part of the omelette.

Now cover the cheese side with other half of the omelette and transfer carefully to serving plate.

In the same pan heat 1 teaspoon of butter and saute cooked and sliced potato wedges, green peas an sweet corn until light golden brown.

Sprinkle some salt and chat masala. Transfer to the omellete dish.

Garnish with some chopped coriander, chop bell peppers.Serve immediately.
