Moist Banana and Walnut Pound Cake

I tried making a cake that was simple and suited my tastes, with what I had in my kitchen!
My friends love receiving this as a gift.
It will be moist when cooled, and fluffy if you leave it a day, so it makes a good present. Slice it up and give as Valentine's Day gifts.

Mind you don't over-mix it once you've added the flour. Use a ripe banana. If it's not sweet enough, add some honey to the mashed banana.
Canola, vegetable and grapeseed oil are mild-tasting. It's fine to use olive oil, but the taste will be a little stronger. Recipe by Ringo19

Ingredients

6 servings
  1. 100 grams○Cake flour
  2. 1 tsp○Baking powder
  3. 60 gramsSugar
  4. 2Eggs
  5. 4 tbspOil (Vegetable, canola, olive, etc.)
  6. 2 tbspMilk
  7. 2Banana
  8. 1Walnuts
  9. 1Lemon juice
  10. 1(to taste)) (Honey

Steps

    Preparation: Slice half a banana into 7 slices and set aside for the topping. Mash the rest and add some lemon juice. Add honey too if you'd like.

    Line the cake tin with parchment paper, and preheat the oven to 180℃. Roast or microwave the walnuts if you can.

  3. 3

    Put the egg and sugar in a bowl and mix lightly with a hand mixer. Mix in the oil.

  4. 4

    Add the milk, the mashed banana and crushed walnuts to the mixer in that order, and mix. Set aside some uncrushed walnuts for the topping.

    Sift in the ingredients marked ○, and fold in using a whisk or a spatula. Note: Don't over-mix it once you've added the flour. The batter should be a little powdery.

  6. 6

    Pour it into the cake tin, drop it gently a few times, and smooth out the surface. Top with the banana slices and walnuts which you set aside.

  7. 7

    Bake for 35-40 minutes at 180℃. It's done when a skewer poked through the middle comes out clean. Remove it from the tin and let it cool. All done!

    It's easier to slice when cooled.
