
Roasted Asparagus

Cooking Instructions

(Method 1) Preheat Oven to 400° F. Break off woody ends of Asparagus. Place spears on a lined Baking Sheet or in a large Casserole Dish, in one layer. Add Olive Oil, Garlic, Salt and Black Pepper, and toss to coat the spears evenly. Slice the butter into several pieces, and distribute across the top of the spears.

Roast in the oven for about 20 Minutes. Around half way through cooking time, sprinkle the Parmesan and Lemon Juice evenly over the top, and return to oven. Roast the rest of the way, or until desired doneness. I prefer mine more well done.

(Method 2) Heat Oil and Butter over Medium Heat in a large Electric Skillet or other Large Skillet. Add Asparagus, Garlic, Salt, and Black Pepper. Toss to coat evenly. Allow to cook for 15 - 25 Minutes, tossing and flipping occasionally. Cook to desired browning and doneness, or until the bottoms are tender. About 5 or 10 Minutes before the end of cooking, add Parmesan and Lemon.
