As biryani is everyone’s favourite dish on menu list . And in my family it’s prepared on every Friday .basically once in a week it’s a must dish . Biryani has got any variations these days like we get chicken 65 biryani , tikka biryani,veg biryani,fish biryani,prawns biryani,egg biryani but most of all mutton biryani & chicken biryani are the best of all with not added extra spices only the authentic style..!

Ingredients

50 minutes prep time:-1 hour
3-4 servings
  • 1 kgbasmati rice (Salam india long grain rice a brand of India gate only)
  • 1 kgfresh chicken (14 pieces)
  • 2onions
  • 2 cupsoil for frying onions will also use This oil for cooking
  • 1 cupthick greek yoghurt (curd)
  • Other ingredients:-
  • 1/2 cupfresh mint leaves
  • 1/2 cupfresh coriander leaves
  • 3-4green chili’s
  • 1lime juice
  • Regular spices:-
  • 2 teaspoonsred chilli powder
  • 1/4 teaspoonturmeric powder
  • 3 teaspoonssalt
  • 1 tablespoonginger garlic paste
  • 1/4 teaspoonGaram masala powder (homemade)
  • Essence:-
  • 1 teaspoonsaffron essence
  • 1 teaspoonyellow food colour (liquid) if using powder add 1/2 teaspoon with milk and strands of saffron
  • Hard spices:-
  • 4-5cinnamon sticks
  • 6-8cloves
  • 6-8green cardamoms
  • 1/4 teaspoonshahi jeera (black cumin)
  • 2 tablespoonsGhee

Steps

50 minutes prep time:-1 hour
  1. 1

    Take a bowl add fresh chicken washed & cleaned now marinate with curd & all spices as shown in the picture below. Also add some oil from fried onions then add fried onions. Cover it and let it rest for about an hour also wash and soak rice with hard spices and 2 teaspoons salt 1 teaspoon will add in marinated chicken.

    Once it is marinated well it oozes oil layer at this point can taste spices accordingly take a wok in which we will be preparing dum biryani apply some oil at the bottom in wok and pop the marinated chicken and spread a layer set aside. Further we will cook rice 70% in another wok and Drain its water.

    Now pop all the rice layer on chicken and add yellow food colour & saffron essence also garnish with some coriander leaves and sprinkle some Garam masala powder. Cover the lid very nicely so that it’s steam is within and set it on stove on medium flame for 10 minutes then set it on low flame burner for about 15 minutes. Just dip and spatula and if it comes wet agin set it on low flame for 5 more minutes if it’s dry it’s done. Off the flame and let it settle for 10 minutes before serving.

    Over deliciously awesome aromatic chicken dum biryani is ready to relish with salad,raita,mirchiyon ka salan.
