Soft Orange Bundt Cake

For me, Orange Bundt Cake is a recipe close to my heart.
Over the past 20 years, I’ve baked so many that I’ve lost count.
It’s a soft, fragrant cake that keeps well for days and is perfect for breakfast or as a snack.
It’s dairy-free, so it’s great for anyone who is lactose intolerant.
The secret is to beat the eggs and sugar very well.
Here’s the original recipe. Over the years, I’ve tried many variations, and it always wins everyone over. You can adapt it to your needs and tastes—I’ve changed the flour, the type of sugar, the oil, and even swapped some flour for cocoa powder. It’s truly a versatile recipe.
Here’s the Good Mood Bundt Cake version...

Steps
- 1
Beat the eggs and sugar together very well using a stand mixer or electric hand mixer.
- 2
Meanwhile, preheat the oven to 350°F (180°C).
- 3
Add the orange juice, olive oil, grated orange zest, and 1 teaspoon of vanilla extract.
- 4
Continue beating the mixture, then sift together the flour and baking powder and add them to the batter.
- 5
Mix until smooth, then pour the batter into a greased and floured 9- or 10-inch Bundt pan.
- 6
Bake for 40–45 minutes. After baking, check doneness with a toothpick—if it comes out clean, the cake is ready; if not, bake for 5 more minutes.
- 7
Once done, remove the cake from the oven and let it cool before serving. You’ll have a soft, fragrant Bundt cake.
- 8
The cake stays soft for at least 5–6 days if covered. It’s delicious with tea or homemade juice.
- 9
NOTE: If you prefer a less sweet cake, reduce the sugar to 1 1/4 cups (250 grams) and add 1 more tablespoon of flour. Don’t open the oven for the first 30–40 minutes to avoid affecting the rise.
