Heat oven to 200c. Line a 12 hole muffin case with paper cases.

In a bowl add the flour, bicarbonate of soda, vanilla essence, cinnamon, yogurt, eggs and melted butter. Stir to combine. Don't over stir it as it'll become tough once baked.

Spoon the mixture into the case and bake for 20-25 minutes (times may vary).

Transfer to a cooling rack once baked. Will last up to 3 days in an air tight container.
