Ingredients

  • 2 2/3 cupsall-purpose flour (about 330 grams)
  • 1 1/2 cupsgranulated sugar (about 300 grams)
  • 4eggs
  • 3/4 cupextra virgin olive oil (about 170 grams)
  • 3/4 cupfreshly squeezed orange juice (about 170 grams, from about 2 oranges)
  • Grated zest of 1 untreated orange
  • 1 packetbaking powder (about 2 1/2 teaspoons, 16 grams)
  • 1 teaspoonvanilla extract

Steps

    Beat the eggs and sugar together very well using a stand mixer or electric hand mixer.

    Meanwhile, preheat the oven to 350°F (180°C).

    Add the orange juice, olive oil, grated orange zest, and 1 teaspoon of vanilla extract.

    Continue beating the mixture, then sift together the flour and baking powder and add them to the batter.

    Mix until smooth, then pour the batter into a greased and floured 9- or 10-inch Bundt pan.

    Bake for 40–45 minutes. After baking, check doneness with a toothpick—if it comes out clean, the cake is ready; if not, bake for 5 more minutes.

    Once done, remove the cake from the oven and let it cool before serving. You’ll have a soft, fragrant Bundt cake.

    The cake stays soft for at least 5–6 days if covered. It’s delicious with tea or homemade juice.

    NOTE: If you prefer a less sweet cake, reduce the sugar to 1 1/4 cups (250 grams) and add 1 more tablespoon of flour. Don’t open the oven for the first 30–40 minutes to avoid affecting the rise.
