Ingredients

1 hour
as required
  1. 4boiled eggs
  2. 1medium boiled potato cut into big pieces (optional)
  3. 1medium onion (grated)
  4. 8-10cashews
  5. 1 tbspmelon seeds
  6. 2 tspginger garlic paste
  7. 1 1/2 tbsp thick curd
  8. 1 tbspcream
  9. 2 tbspbarista (fried onions)
  10. 1 tspcoriander powder
  11. 1/2 tsp garam masala powder
  12. to tasteSalt
  13. 2 tspsugar
  14. 1 cupcold milk
  15. 2slited green chillies
  16. as neededGhee
  17. handfulFried raisins and cashews
  18. 1bay leaf
  19. 2cinnamon sticks
  20. 2green cardomom
  21. 1-2dried red chilli
  22. 1 tspshahi jeera / cumin seeds
  23. 1-2 dropskewra essence
  24. 1-2 dropsrose essence
  25. 1/4 tspPepper powder (optional)
  26. 2 tsp chopped coriander leaves for garnishing

    Make slits with the help of a knife over the eggs. Now heat a pan add 2 tsp of ghee & shallow-fry the boiled eggs and potatoes by sprinkling some salt. Now keep it aside.

    Soak the melon seeds and cashews in water for half an hour then in a grinding jar add this soaked cashews and melon seeds and curd and grind it into a smooth paste. Keep this paste aside.

    Now in the same pan, add 2 tbsp of ghee. Add all the khada masalas, shahi jeera, bay leaf, dried red chillies, green cardomom, cinammon sticks. Let them splutter then add grated onion & green chillies to it. Fry it for about a minute then add ginger-garlic paste to it. Keep the flame low and fry the masalas well for 2 to 3 mins more.

    Then add dry masalas like coriander powder, garam masala powder, salt, 1 tsp sugar and give it mix. Fry for 1 more min. Then add cashew paste to it. Mix everything well and fry the masalas until oil starts releasing. Keep the flame low.

    Once the masalas is fried, add cold milk to it. Give it a mix. Now cover it and cook it for about 2 mins. Then add fried eggs & potatoes to it. Adjust salt and sugar at this point of time. Give everything a good mix and once again cover it and cook it for 7 mins on a low flame.

    After 7 mins open the lid and add some cream to it. Add 1 tbsp of barista, fried cashews and raisins, sprinkle some pepper powder and give it a good mix. Cook for about 2 mins more. Now switch off the flame. Your Shahi Egg Korma is now ready to serve. Sprinkle some barista and chopped coriander over it.

    Serve it with some Butter Naan or Bashonti Pulao. (for Bashonti/Basanti Pulao, visit my recipies column) Enjoy this yummy delicacy with your loved ones.
