Mexican lentil and bean sauce

Add olive oil into pot

Add in diced onion and garlic

Add in chopped carrot

Add in diced capcicum

Stir then immediately add in drained lentils

Add 1 cup of veggie broth

Add in chilli powder oregano paprika garlic powder and cumin

Wait until concoction reduces then add in tinned corn

Sqeeze in the juice of a lime

Taste and assess the flavour decide what its lacking then proceed.

Now we create our guacamole.

Add in a bowl all the avocados and mash

Add in salt pepper a portion of red onion 1 tomato 1 limes juice and portion of our coriander

Rest guacamole in bowl ready for later use

Now for the nachos.
lay out the corn chips in a baking tray

Cover with a thin layer of mexican cheese

Then pour out in a thin layer mexican sauce over corn chips

Repeat until satisfied with the volume of the tray taken up

Add last layer of cheese then bake at an appropriate temperature for ovens ability

Remove baking tray from oven then add in fresh diced red onion tomato lettuce coriander

Sploch a portion of the guacmole on top and we are done and ready too eat
