First thing first clean, wash and take out all the water from the mutton. Then in a pressure cooker heat up mustard oil. When it reach the smoking point then add the mutton and cook till all the water dried out. Then add salt mix and cook till oil oozes out.

In a chopper add the garlic and green chillies and chop it finely then add it to the mutton. Again mix it well and allow it to cook on high flame. Then add a tbsp of ginger paste and mix again. Cook till it start releasing the aroma.

Then in the same chopper chop the onions and add to the mutton. Mix it well and cook till it gets soft and transparent. Then chop the tomatoes in the same chopper and mix well. Start cooking it mixing together until it start sticking to the bottom. Then lower the flame and add the dry ingredients.

These are all the dry ingredients slong with whole spices which we will use. Now when the oil comes on surface add all the dry ingredients and mix well.

Cook on medium flame when it start sticking the bottom then add around half cup water and mix well. This will help onions and tomatoes get mushy and blend well with all the other ingredients. Mix till again oil oozes out. Then add water to it. Add water as much gravy you want. I had added one glass Of water. Try to make a medium consistency gravy.

Boil it and cover the lid of the pressure cooker till it's completely cooked. It will not take much time to get tender as we have already much cook it with the spices. Once done and the pressure releases from the pressure cooker add the chopped coriander leaves to it and mix.

Dish out it and serve with roti/phulka/naan/chapati/paratha or whatever you like. Serve hot with some rice and salad. Enjoy it. Happy Cooking
