If using frozen calamari, let it thaw.

Wash, clean, and cut the calamari as needed.

Place the calamari in a bowl, add the baking soda and lemon juice, and mix well. Cover with plastic wrap and refrigerate for 10 minutes.

Rinse the calamari, then season with salt, pepper, and paprika.

In a large plate, mix all-purpose flour and cornstarch.

Dredge each piece of calamari twice in the flour mixture, shaking off any excess flour at the end.

Heat the oil over high heat and fry the calamari in batches for 5 minutes each. Stir gently so the coating stays on. When the calamari floats to the surface, it's ready. Remove and place on paper towels.

Serve with lemon juice and enjoy!
