Cooking Instructions

Mix the flour, corn flour and baking powder in a bowl.

Separate the eggs in different bowls. Start with the egg yolks. Add 1.5 Tbsp sugar and the vanilla and hand whisk it gently until it slightly changes color. Set aside.

Start mixing the egg whites on slowest speed until bubbles start to foam. Add the sugar slowly while mixing on slowest speed. Then mix on the highest speed until peaks form when you lift the mixer.

Add a spoon of the egg whites into the yolks and mix them by hand gently. Add the mix to the egg whites and hand whisk by folding the mixture from bottom to top gently.

Add the dry ingredients and hand whisk with the same technique.

Preheat oven to 190 degrees C for 20 minutes.

NB: its better if you directly cook the batter without leaving it to sit.

Use a pan upside down (we're using the bottom of the pan). Put baking sheet and form vertical shapes.

Cover the batter with the sugar mix completely.

Cook in the oven for 13 minutes.

I wanted to make a crispy langue de chat so I tried many things and came to this conclusion I thought that the reason for why it became soggy texture was because I wasn't able to blend in the egg white well, so I used a hand mixer.
