Langue de Chat Cakes (to use up egg whites)

I thought of making langue de chat but dropping the batter with a spoon or using pastry bag was too much for me. So I made it into cakes. I thought it would fail since it was a spur-of-the-moment decision. I was so happy that it was successful.
You don't need to turn the egg white into meringue. That's too much! It's pretty sweet so adjust the amount of sugar as you like. Recipe by Chipetan

Cooking Instructions

Beat the butter until mayonnaise consistency. Add sugar and beat further.

In another bowl, whisk the egg white until slightly fluffy.

Add egg whites into the butter/sugar mixture in 3~4 batches, combining well each time.

Add flour and lightly mix with a rubber spatula.

Pour the batter into the molds of your choice and bake in a 355F/180C oven for 20~25 minutes (adjust baking time according to your oven and the size of the molds.)

It's moist and tasty.

[When you have a lot of egg whites] Weigh the egg whites first, then use the same weight for the other ingredients.

If you refrigerate the cake in the mold, the tannin in the ingredients will react to the stainless steel and little specks will appear in the cake.
