Farfalle with Smoked Salmon and Cream Cheese

Fill a pot with water and bring it to a boil.

Meanwhile, heat a drizzle of olive oil in a skillet and sauté the sliced shallot until golden. Add the smoked salmon cut into strips and cook for about 2 minutes, until it changes color. Add the cream cheese and a ladle of hot water, stirring until the cheese melts.

Add the tomato sauce and stir (this gives the sauce a pink color). Now add the Parmesan cheese (to balance the acidity of the cream cheese) and mix well. Add more hot water if needed.

Once everything is well combined, cover with a lid and turn off the heat. The sauce should be creamy but not watery.

Meanwhile, salt the boiling water and add the farfalle. Cook according to the package instructions. While the pasta cooks, slice the arugula and set aside for the final garnish.

One minute before the pasta is done, turn the heat back on under the sauce. Using a slotted spoon, transfer the farfalle to the skillet. Add a bit of pasta cooking water and toss the pasta with the salmon and cream cheese sauce for about a minute. Then turn off the heat and plate the pasta.

Sprinkle with chopped arugula and serve hot.
