Lemongrass, galangal, and kaffir lime leaves are the key herbs that create the enchanting flavor of Tom Yum Kung. Prepare the necessary ingredients: roughly chop the materials, crush the chili peppers, and cut and bruise the lemongrass to enhance its aroma.

Sauté the shrimp shells with chili paste to release their fragrance.

Add water and bring to a boil.

Remove the shrimp shells, then add the herbs and continue to simmer.

Add mushrooms, tomatoes, and shrimp (I also added fish fillets). In Thailand, there are versions that use only chicken.
