I came up with this method to use up the goya I grew in my garden in the summer.
I don't like bitter things, so I wanted to find a way to prepare it so it wasn't bitter.

I came up with this method to use up the goya I grew in my garden in the summer.
I don't like bitter things, so I wanted to find a way to prepare it so it wasn't bitter.

Wash the bitter gourd well, and cut it in half lengthwise.

Take out the seeds with a large spoon.

Remove all of the white pulp.

The thinner you cut it, the less bitter it will be.

Sprinkle it generously with salt.

Rub it well with your hands.

Let it sit for a while. When you squeeze it, green juice will come out, like in the photo. The juice is bitter!

Heat some water in a pot. Drain the green juice, then boil the goya.

Lightly boil, and when it turns bright green, drain it in a colander. Use it in dishes like Goya salad or Goya stir-fried Okinawan style (goya chanpuru).
