Easy White Sauce in the Microwave
This is a microwaved recipe I adapted from a recipe book that I've used for over 25 years.

Put the 4 tablespoons of butter and 5 tablespoons of flour and heat in the microwave at 600 W for 2 minutes. Mix the melted butter and flour real well.

Mix in the 3 cups of water a little at a time.

Once all the milk has been mixed in, heat in the microwave at 600 W for 10 minutes. Stir it up about 3 times along the way. Once it loosens up, heat for another 1-2 minutes.

Season with a bit of salt and pepper. If making gratin, season with about 2 teaspoons of soup stock granules. If you make the sauce on the looser side, it's great for gratin.

If you make it thicker, it's great for cream croquettes. Add a bit more flour and heat until thick. Also, add 2 teaspoons of soup stock granules.

If you add it to pot-au-feu, it becomes cream stew! Pot-au-feu is flavorful, so once mixed, check the taste and adjust with salt and soup stock granules as needed.
