
Chicken Fajitas

We love Mexican food and will generally get on a kick for the week of tacos, burritos, quesadillas, and fajitas. I love the variety in which you can make these fajitas! I am not a meat eater but the rest of my family is so I will usually make them chicken fajitas and myself zucchini fajitas. Sometimes I like to add a dash of tequila, Matt gets a kick out of lighting the tequila on fire... lol!
Chicken Fajitas

Slice chicken breast into strips.

Add olive oil to a large skillet and add the sliced chicken and squeeze the fresh lime juice onto the chicken.

While the chicken is cooking start slicing your peppers and onions into slices (if you want them to cook quicker slice them thin)

Once the chicken is done remove from the skillet and add your peppers and onions. Cook until they are tender.

When the peppers are done add the chicken back to the skillet and add the fajita seasoning packet. (You will need to add in a little water as well. The packet should tell you how much you need)

As soon as the seasoning is mixed in well serve and enjoy! We usually serve with salsa, sour cream, and guacamole. You could always add in shredded lettuce.
