Spinach is a nutrient rich vegetable. Its a healthy and delicious recipe pairs well with rice.
Steps

Wash and soak the thoor dal for 15 mins.

Pressure Cook the dal with 1.5 cup water - 3 whistle. Add salt and turmeric

In a pan heat oil and add mustard. Once mustard pops add dry chilli and curry leaves. Add onion and saute well.

Once onion turns translucent add tomato and ginger garlic paste. Mix well Saute for 2 minutes.

Add Spinach and mix well. Cover the pan and cook for 3 more mins.

Add the cooked dal. Mix well, cook for 5 more mins. Add salt to taste. (We already add salt to the dal, just add little bit more).

If the gravy is to watery cook further to get correct consistency. Ready to serve.
