Apple & Soy Milk Mousse

My mother-in-law is diabetic but really likes sweet food, so I wanted to make something she could eat.
'Marvie' sweetener doesn't cause your blood sugar to rise too much, so it's suitable for those with diabetes and also great for anyone whose on a diet.

Agar tends to clump together when it comes in contact with liquids, but so long as you mix it well with the sweetener you shouldn't have this problem. If lumps do form, just work them out with a whisk. Recipe by Rurina

Ingredients

  1. 200 mlSoy milk
  2. 200 mlApple juice
  3. 2 tbsp○Low-calorie sweetener or sugar
  4. 5 grams○Agar
  5. 1Apple
  6. 1Water
  7. 50 grams☆Low calorie sweetener, or sugar

Steps

  1. 1

    Peel the apple and cut into 2 cm cubes. Combine the apple, water and ☆ sugar (or sweetener such as Marvie) in a saucepan, and boil until most of the liquid has evaporated.

    It should look like this when boiled.

    Place 5 apple cubes in each ramekin.

    Mix together the ○ marked ingredients.

  5. 5

    Pour the apple juice into a saucepan and sprinkle in the Step 4 mixture, heat, and constantly mix to stop clumps from forming.

  6. 6

    Once it comes to a boil, reduce the heat to low and, using a whisk, mix for a further minute.

  7. 7

    Leave the mixture to cool, then add the soy milk and mix thoroughly. Pour into the Step 3 ramekins.

  8. 8

    Leave to chill in the fridge. Once set, top each mousse with about 3 more of the Step 2 apples to finish.
