Cheese Frittata ♪ From Leftover Pasta

I often make this with leftover pasta. Rather, I want to make this so I intentionally boil too much pasta (lol). Frittatas are usually made in the oven, but I came up with this frying pan version for simplicity.
Use whatever you like for the ingredients. Spinach, bell peppers, mushrooms, broccoli, dried tomatoes and cut mini-tomatoes work well. You can also add ham or bacon. I think it's best if you cut the vegetables into small pieces, cook well until softened, then add the pasta and egg. Cover with a lid and cook slowly, but take care not to burn it. Recipe by KT121

Cooking Instructions

If the cooked pasta has hardened and clumped together, place in a strainer and pour boiling water over to separate.

Add the olive oil to a Teflon frying pan, and cook the minced vegetables until wilted, or at least cooked through. Flavor with salt and black pepper.

Add the pasta to Step 2 and combine. Beat the eggs and pour in evenly.

Once you've added the eggs, top with the herbs and cheese. Cover with a lid, and cook on low heat slowly until the eggs have cooked and the cheese has melted.

Top with ketchup if you like and enjoy ♪

There's a spaghetti soup dish served at pasta restaurant chain called Goemon in Japan. I saw on TV that the secret ingredient was miso, and wondered if I could easily make this at home.
