Blanch the spinach in boiling salted water. Transfer the spinach to a bowl of cold water.

Squeeze water out from the spinach. Remove the ends and cut into 3 cm pieces. Beat the eggs.

In a pot, add the dashi base, mirin and usukuchi soy sauce and bring to a simmer. Add the spinach.

Spread the beaten eggs over the spinach. ※The eggs will cook faster if you microwave them for 25-30 seconds before adding to the soup.

Cover with a lid and bring back to a simmer. Turn off the heat.
