Pour the pure soy milk into a pan, and warm it to 80 °C. Then put the Lemon juice in the pan.

Simmer it for 10 minutes while stirring over low heat. Remove from heat and leave it for 15 minutes to cool.

Pour the cooked soy milk into a colander and allow it to drain. Place some cooking paper on top with some weight to compress the cheese and improve the drainage for about 1 hour.
