I created this recipe because I wanted to eat a oil free and healthy cake with the ingredients I had at home.

Adding a little more vanilla extract than usual gives this cake a nice fragrance.
If you are using 200 g of pancake mix, you don't need flour, sugar, baking powder, or vanilla extract. Recipe by kouyoshi

1 blockTofu (silken)
1Egg
300 mlWhite flour

1few drops Vanilla extract

Mix all the ingredients with a hand mixer. If you don't have one, you can mix with a whisk.

Use a quick cook function and bake the mixture twice. The cake becomes fluffy using a hand mixer as the photo. I only used flour in the main picture. I served with homemade yuzu tea.

This is a matcha flavored version. It has a nice matcha color and fragrance. I added 1.5 teaspoons of matcha.
