1Medium-sized fish
to taste Salt
to taste Pepper
Butter to taste
For sauce
Pan drippings
1 1/2 cupsboiling water
Salt
Pepper
A-1 sauce
Few drops tabasco
Dry mustard
Red pepper
Chili powder
Paprika

Steps

Scale,clean,wash and dry fis. Split down the back and remove backbone. Place skin side down in pan,add seasoning,butter and brown in a 400 oven. Baste fish with butter while cooking. When golden brown, place over medium flame on top of stove and prepare sauce.
Blend all the ingredients for sauce,stir and cook 2 minutes. Pour over fish.
