Ingredients

4 Servings
  • 1Sweet Potato *Today it weighed 450g
  • 1 bag (120 g)Baby Spinach
  • 1-2 tablespoonsOlive Oil *extra virgin recommended
  • 60 gFetta *crumbled
  • Salt & Black Pepper
  • 2-3 tablespoonsPine Nuts *toasted

Steps

  1. 1

    Peel Sweet Potato, cut into bite-size pieces, and steam or roast until cooked. Do not over cook as it gets mushy.

  2. 2

    Place Baby Spinach in a mixing bowl, add Olive Oil, Salt & Black Pepper, add cooked Sweet Potato pieces, and gently mix to combine. Baby Spinach would be half-cooked by the hot Sweet Potato, and the volume will be reduced.

  3. 3

    Add crumbled Fetta and toasted Pine Nuts. You can mix them, or just sprinkle them on top.

  4. 4

    *Note: You can simply mix this salad with freshly cooked Pasta. You may wish to add extra Olive Oil and Slat & Black Pepper.
