Roast Pork Leg Roll (Jon Style)

I made this roll using a pork leg. I used the skin with some of the meat, and made breakfast sausages with the rest of the meat. This roast pork leg roll is absolutely delicious, especially when the skin turns out crispy like pork cracklings. The roll came out amazing, with super crunchy skin.

Carefully remove the skin from the pork leg with a sharp knife.
Debone the pork leg and set aside about 3 lbs (1,350 grams) of meat.
Save the rest of the meat for making sausages.
Cut the meat into strips.
In a bowl, mix the marinade spices and season the pork strips.
Lay out the pork skin, place the meat strips in the center, and roll it up, tying with kitchen twine as you go.
Let the pork roll marinate overnight. - 2
Place a baking tray with a rack and set the pork roll on top. Brush olive oil over the pork roll and season the skin with only sea salt.
Preheat the oven to 300°F (150°C) and bake for 1 hour.
Increase the temperature to 485°F (252°C) and bake for about 40 minutes until the skin is crispy like cracklings.
Let it rest for 15 minutes before slicing. - 3
I served it with a pebre sauce, adding 1 teaspoon of whole grain mustard, and it turned out delicious.
