Ingredients

40 mins
6-8 servings
  1. 500 gfirm tofu, cut into 1cm cubes
  2. 200 gpork or beef mince
  3. 3medium capsicums (any colour),chopped
  4. 2 cupsfrozen peas
  5. 1 bunchspring onions, chopped
  6. 1 cupcashew nuts
  7. 1 tbsppeanut oil
  8. Miso Marinade
  9. 3 tbspwhite miso paste
  10. 3 tbspsoy sauce
  11. 3 tbsprice vinegar
  12. 3/4 cupShaoxing cooking wine (Chinese cooking wine)
  13. 3bird eye chillies, chopped

Steps

  1. 1

    Combine all marinade ingredients and tofu in a large bowl. Mix well and set aside for at least 30 mins

  2. 2

    Heat peanut oil in a wok over high heat. Add minced meat and stir well until thoroughly cooked, approx 1-2 mins.

  3. 3

    Add capsicums and stir-fry for approx 3 mins. Capsicums should be cooked but still crunchy.

  4. 4

    Add tofu mixture and stir through gently for approx 2 mins.

  5. 5

    Add frozen peas and stir for approx 30 seconds. Turn off heat, add spring onions and cashew nuts. Stir through the residual heat.

  6. 6

    Serve with brown rice.
