Roast peanut on a tawa at low flame, once the skin is roasted let it cool down, and grind to coarse powder and keep aside

Cut baigan in cubes and soak in salt water to avoid turning black

In a kadai, heat oil, add mustard seeds once they splutter add hing and chopped garlic and green chilli
- 4
Now saute till raw smells goes, add baigan and saute for a minute or two
- 5
Add chopped tomato salt and cove rand cook till tomato and baigan is cooked

Now add all dry masalas and mix nicely, add crushed peanut powder and some water and simmer for 3-4 mins

Serve with masala bhat or chapati a very gud lunch option.
