#Palak rice or spinach pulao is a healthy, delicious and colorful dish made of spinach, spices & rice. It can be served with a salad or raita. Palak rice is quick to make for a meal and also goes well in lunch box.
Steps

Wash, rinse and Soak rice for 15 minutes. Peel, Wash and Chop onions.

Wash, peel and chop spinach. Blanch in hot water for 2 minutes. Strain water. Put it in blender and grind to a coarse paste.

Transfer spinach paste in a bowl.

Heat cooking oil in pressure cooker. Add cumin seeds and when cumin seeds splutter put finely chopped onions and fry till golden brown. Add tomato puree and whole masale. i.e., cardamom, black pepper seeds, cloves and cinnamon stick.

Add spinach puree and saute for 5 minutes. Add rice, salt and red chilli powder and stir. Add water.

Pressure cook till 2 whistles. Switch off the flame. Let pressure releases automatically. Open the lid.

Serve nutritious and healthy rice hot with pickle or curd.
