the kofta’s are basically a small round shaped balls stuffed with either meat or choice of veggies. generally these fried kofta’s are then sautéed and simmered in thick creamy tomato and onion based spicy curry / gravy. out of all the kofta curry recipe, paneer kofta curry and malai kofta recipe is my personal favourite and I typically enjoy it with tandoori roti and garlic naan.

Ingredients

  1. FOR KOFTA:
  2. 1 cuppaneer, grated
  3. 1 cuppotato, boiled & mashed
  4. 1/4 cupbesan
  5. 1/2 tspkashmiri red chilli powder
  6. 5cashew
  7. 1/4 tspturmeric
  8. 1/2 tspgaram masala
  9. 3 tbspcorn flour, to roll
  10. 3 tablespooncoriander leaves finely chopped
  11. 1/4 tspsalt
  12. as per needoil for deep frying
  13. For Gravy
  14. Whole Garam Masala -
  15. 2 cardamom pods,
  16. 2 pieces of Dalchini(cinnamon),
  17. 1/2 tsp Cumin seeds
  18. 6-7 black peppercorns,
  19. 3-4 cloves
  20. 2Onion - (roughly chopped)
  21. 15Cashew Nuts (Kaju) -
  22. 2Tomato - (roughly chopped)
  23. 3 tspKashmiri Red chilli powder -
  24. 1 tspCoriander Powder (Dhania) -
  25. 1/4 tspTurmeric powder (Haldi) -
  26. 1 tspGinger chopped -
  27. 5 tspOil / butter -
  28. as per tastesalt
  29. 1 tablespoonkasuri methi -
  30. 1green chilli -
  31. 1/4 cupcream

    Kofta preparation recipe:

    firstly, in a large mixing bowl take 1 cup grated paneer and 1 cup boiled & mashed potato.

    also add ¼ cup besan, ½ tsp chilli powder, ¼ tsp turmeric, ½ tsp garam masala, 5 chopped cashew, chopped coriander leaves and ¼ tsp salt.

    combine well to form a smooth and soft dough.

    Pinch a small ball sized dough and prepare a round ball without any cracks.
    roll them in corn flour for extra crisp out covering.
    deep fry in hot oil or bake in preheated oven at 180 degree celsius for 20 minutes.
    stir occasionally, and fry on medium flame.
    fry till the kofta turn golden and crisp.

    Curry preparation recipe:

    Heat 2 tsp oil / butter in a pan. Add ginger, and let ginger cook for 2-3mins. Then add the roughly chopped onions, tomatoes and cashews and fry them until onions and tomatoes softens.

    Once tomatoes and onions are cooked, let it cool down. Then grind them and make smooth paste.

    Now in a Kadai, add 3tsp oil, then Add green chilli and the whole spices. Further add ready gravy to it. Let gravy simmer for 5-10mins. Keep stirring in between.

    Now add powdered spices like Kashmiri chilli powder and coriander powder and mix well. Add kasuri methi & cream and cook for 2-3mins.
    Cover and bring this gravy to a boil for about 10 mins or so. Till gravy starts leaving the oil from edges.

    Add the fried koftas. Cover and cook for another 5-7 mins or until the gravy thickens a little until the desired consistency.

    Add very little water if you find its too thick.
    Add kasuri methi and cook for 2-3mins.

    Garnish with coriander sprigs and serve hot with rice or roti.
