Cooking Instructions

Chicken motsu and ovaries come in a package like this.

Boil the chicken motsu and ovaries in water. Once it comes to a boil, simmer for 2-3 minutes. A lot of white scum will rise up, but that's okay.

Rinse in running water and cut the motsu into 2-3 cm lengths.

Heat the ◎ ingredients in a pot and add the motsu and ovaries.

Simmer while stirring occasionally. It's ready when the ovaries are shiny.

I like it to have a real deep teriyaki flavor, so I simmer until it looks like this.

In our house we don't include the gizzards since the children find them hard to eat, but they do eat the livers if I cook them in a sweet-salty sauce as they do at soba restaurants.
