Blueberry coffee cake...
Just made this this morning...came out great. Not real sweet, but made with healthy ingredients. Good for when you want that "carb" but not too much CARB 😁 I used 100 % whole wheat flour-thats why it is dark color.

Ingredients

  1. 1 1/2 cupflour (I used 100% whole wheat)
  2. 1/2 cupquick oats
  3. 2small bananas, mashed
  4. 4 tspbaking powder
  5. 1/2 cupmilk
  6. 1/2 cuphoney
  7. 1/2 cupsugar substitute (I used Monk fruit sweetener)
  8. 2eggs, beaten
  9. 1/2 cupbutter (1 stick softened)
  10. 1/2 cupblueberries (wild Maine blueberries work best.)
  11. 1 tspvanilla extract

Cooking Instructions

    Cream together butter and sweeteners

    Add eggs, vanilla, mashed banana and milk. Mix well

  3. 3

    Sift together flour and baking powder add it to liquid ingredients with the oats.

    Once mixed together, fold in the blueberries.

  5. 5

    Pour batter into greased round cake pan.

    Sprinkle about 1/2 cup oats across the top of the batter. Sprinkle about 1/4 cup melted butter and drizzle about 1/2 cup of honey or maple syrup all over the top of the oats.

    Place in 350 degree oven for about 1 hour. Check the middle for doneness by pricking the center with a toothpick or knife until it comes out clean and no batter attached.
