Steps

To make dough
Take maida and wheat flour add in oil and salt and water as per need and make a dough a little hard than roti.
Let it rest for 20 minutes - 2
After 20 minutes knead the dough. Divide the dough in small parts and make a roti from this dough pieces.

Spread oil on roti and spread some maida. And then place the second roti on top of it and roll it till it is thin. Now half roast the roti on the tawa. Then after roti is made separate both the rotis. Now your samosa

In a mixer grinder add in garlic, green chilli and ginger and make a fine paste.

To make stuffing
Take the potatoes and peel them and mash them. - 7
In a pan heat oil. After the oil has been heated add in cumin seeds, asafoetida and mix it. Then add in finely chopped onion on medium low flame and roast them. Then add in boiled peas and mix it for 2 minutes.

Then add in the grinded green chilli, ginger and garlic. Mix it properly. Add in the curry leaves.

Then add in garam masala and coriander powder and mix it. Add in aamchur powder and boiled and mashed potatoes and mix it.

Add in salt, and mix it. Let it cool for 15 minutes. Add in sugar powder and coriander leaves and mix it.Now your samosa stuffing is ready.

To make maida paste
In a small bowl add in 1 tablespoon maida and add in 2 tablespoon water and make a paste from it. - 12
Take 3-4 samosa roti and roll it and remove the side part. Then cut the roti in 2×6 inch rectangle.

To make samosa take the rectangle part of roti and fold samosa and stick it with help of maida paste so that samosa pocket is ready. Now fill in the samosa stuffing in samosa pocket.

Once again folding samosa stick the last part of strip with help of maida paste to the samosa. Now samosa is ready and make other samosa like this.

To fry samosa
Heat oil in a kadhai
After oil has been hot add in samosa and fry till they are golden brown. Now remove samosa from oil and keep it out in tissue paper. - 16
Serve the samosa with ketchup.

Note:-
Whenever you fry samosa make sure all the sides of samosa is been closed properly otherwise if it would be open oil would enter in samosa.
