An easy to make vegetarian curry, served with rice and pita

Par boil the broccoli for 5 minutes until soft but still with a crisp and drain.

Cook the rice to the instructions on the bag.

Add the coconut milk to the broccoli. Boil for 2 minutes then add the red curry paste until combined.
- 4
Add the chickpeas and simmer for 5 minutes, adding the spinach last so not to overcook.
- 5
Add the garlic butter to the Pitas and grill for 3 minutes.
- 6
Serve. Add yoghurt of required.
