In a large skillet or pan, heat a little oil and sauté the onion for 1 to 2 minutes, without letting it caramelize. Add the rest of the vegetables, a pinch of pepper, and a teaspoon of salt. Mix well and sauté for another 5 to 7 minutes. Set aside.

In a pot with a little hot oil, add the rice and toast it, stirring constantly, until it turns from translucent to white. Add 5 cups of hot water, the sautéed vegetables, the shredded dried beef, the annatto powder (or red food coloring), and a beef bouillon cube or beef seasoning powder. Stir well, cover, and check the salt. Let it simmer for about 10 minutes over medium-low heat. After 10 to 12 minutes, add 2 cups of cold water.

Let it cook for another 5 to 8 minutes, until the rice is fully cooked and the liquid is absorbed. Once ready, stir everything well and serve as shown in the photo, with a fried egg and fried plantain on the side.

RECOMMENDATIONS OR SUGGESTIONS:
1. Charque is dried, heavily salted beef fried in oil. Look up alternative ways to prepare charque if you can't find it.
2. Annatto (uruco) is a seed that colors food like other food colorings. It also has a unique and delicious aroma.
