All-purpose! Miso Glaze

I had a lot of miso, but didn't want to use it up in miso soup, so I made this glaze.
Be careful not to burn it.
If you prefer it sweeter, add more sugar.

This time, I used barley miso.

Put all the ingredients except for the mirin and soy sauce in a pot.

Mix it well.

Add mirin and soy sauce. Mix.

Turn on the heat and bring to a boil.

Turn down the heat to low and boil for 5 minutes.

Pour immediately into a heatproof container. It holds up to a month in the fridge.
