Ingredients

  1. 1 cupbasmati rice (about 200 grams)
  2. 1/2 cupgrated raw mango (about 60 grams)
  3. 2-3 tablespoonsoil
  4. 2dried red chilies
  5. 2green chilies, sliced lengthwise
  6. 6-8curry leaves
  7. 2 tablespoonspeanuts
  8. 1 teaspoonurad dal (split black gram)
  9. 1 teaspoonchana dal (split chickpeas)
  10. 1 teaspoonmustard seeds
  11. 1/4 teaspoonturmeric powder
  12. 1 teaspoonsalt, or to taste
  13. 2 pinchesasafoetida (hing)
  14. Chopped cilantro, as needed, for garnish

Steps

    Rinse the rice well. Cook it with water and a pinch of salt until about 85% done. Drain any excess water using a strainer and let the rice cool slightly.

    Heat oil in a pan. Add mustard seeds, asafoetida, urad dal, chana dal, and peanuts. Sauté until the dals and peanuts are golden. Add dried red chilies, green chilies, and curry leaves. Stir in the grated raw mango and mix well.

    Add turmeric powder and salt. Add the cooked rice and mix everything together. Cover and cook on low heat for 1 minute.

    Add chopped cilantro and mix. Serve the delicious raw mango rice hot.

    I used basmati rice here, but you can use any rice you like. This recipe also works great with leftover rice.
