A soft sumptuous velvet like kebab that goes for many ocassions.

Steps

Wash minced mutton and strain it.

Wash split chickpeas (brown) and soak it for about an hour.

In a pressure cooker add minced mutton and split chickpeas along with the ginger, garlic, raw papaya, red chilli, cumin seeds, black pepper corn, black cardamom, cinnamon stick, mace, bay leaves and cloves.

Add a little water so that mutton and chickpeas submerge.

Let it cook on a high flame until a whistle and then cook it for about 10 - 12 minutes on a low flame or until the mutton and chickpeas are soft and tender.

Ensure to evaporate the water completely or the kebab mixture shall turn mushy.

Cool it completely.

Transfer it to a blender and blend to a smooth paste.

Next, add finely chopped onion, ginger, green chillies, coriander leaves and mint leaves.

Divide the mixture to 6 -7 equal parts and roll into balls.

Flatten them as desired shape and make kebabs on your palm. Place all of them on a plate.

Heat oil in a shallow pan for frying.

While the oil turns hot enough, gently place the kebabs one by one on the pan.

Fry on a medium heat until golden, flipping to and fro as required.

When they turn golden brown transfer kabab é Zahida to a serving platter.

Garnish with lettuce or cabbage leaves, onion slices and cherry tomatoes.

Serve with green chutney.
