Brown Rice and Jaggery Payesh

We use rice for holy purpose and side by side we can prepare a pulao or khicdi in pressure cooker, quickly to satisfy our hunger pangs. We are familiar with basmati rice, brown rice.
Here ,I have taken brown basmati rice, Nolen Gur (Date Jaggery) and some chopped almond, cashews to make this delicious Podding/Kheer/Payas.

Wash and soak rice in enough water for 3 hours. Drain the water and coarsely crush the brown rice.

Take a cup of milk in a pressure cooker. Add the drained brown rice. Mix well and pressure cook for two whistles.

After the release of pressure automatically, add gur to the cooked brown rice. Mix the rest of boiled milk and some chopped nuts. Bring to boil and cook till the milk reduce and the payesh begins to thicken.

Add a pinch is salt to balance the taste. Adjust sweetness and thickness of payesh according to your choice.

Serve the brown rice payesh hot/cold after garnishing with rose petals.
