Ingredients

3 servings
  • 2 tbspoil (olive oil) / any edible oil
  • 1/2 tsp minced garlic or finely chopped garlic (3 to 4) cloves
  • 1/3 cupfinely chopped onions (1 onion)
  • 1cup/ 180 gms(3medium tomatoes)
  • 1.25-1.5 cupschopped mix veggies like carrots,green beans,
  • As neededCauliflower, red / green / yellow bell peppers (mix),
  • as requiredBaby corn and potatoes
  • 1/4 cupgreen peas fresh
  • as requiredChicken mince or thin slices chopped
  • 1/4 tspblack pepper powder
  • 1/4 tspturmeric powder
  • 1/4 tspgaram masala powder
  • 1/2 tspKashmiri red chilli powder
  • 1/2 tspcoriander powder
  • 1/2 tspcumin powder
  • as per tasteSalt
  • 1 cupwater
  • 1 tspmixed dry herbs- basil, thyme, oregano, parsley etc
  • 1 tbspchopped coriander leaves for garnish
  • For Cooking Macaroni
  • 1 cup macaroni or elbow macaroni or 125 gms macaroni
  • 1/2 tspsalt
  • 3 cupswater

Steps

    Cooking macaroni - In a pan, heat 3 cups of water and 1/2 tsp salt. Bring it to a boil.

    Add 1 heaped cup macaroni (125gms). Stir with a fork.

  3. 3

    Begin to cook macaroni on medium to high flame till they are all dente- they should have a slight bite to them.

  4. 4

    Drain all the water and keep cooked macaroni aside.

  5. 5

    Cooking vegetables- Heat 2 tbsp oil in a pan. Lower the flame. Add 1/2 tsp minced garlic or finely chopped garlic. You can also 1/2 tsp ginger garlic paste instead.

    Saute till the garlic is light brown or till its raw aroma goes away.

  7. 7

    Next add 1/3 cup finely chopped onions.

  8. 8

    Mix & saute onions on a medium low flame stirring often till they become translucent.

  9. 9

    Next add 1 cup finely chopped tomatoes. Mix well.

  10. 10

    Cover the pan with a lid. In between do check when cooking tomatoes.

  11. 11

    Cook tomatoes on a low to medium low flame till they soften and become pulpy.

    Lower the flame and then add all the spice powders one by one.

  13. 13

    Then add 1.25 to 1.5 cups of mix vegetables. Also add 1/4 cup green peas. Add chicken pieces too. Pour some oil or butter if needed.

    Season with salt as per taste and mix very well.

    Pour 1 cup water and mix again. Cover the pan with lid.

  16. 16

    On a medium to low flame simmer till the vegetables are cooked. In between do check and if the water has become less you can add some more water.

    Making Macaroni pasta-Once the vegetables are cooked and tender, add the cooked macaroni.

    Mix well and cook for a few more minutes till all the water is absorbed. Stir occasionally.

    Lastly, add 1 tsp mixed dry herbs- basil, thyme, oregano,parsley. Mix again.

    Check the seasonings and add more of salt or herbs if required.

    Serve macaroni pasta hot or warm. You can top with grated cheddar cheese or parmesan cheese or cream before serving.

  22. 22

    Garnish the pasta with some finely chopped coriander leaves or parsley or any fresh herb of your choice before serving.
