The farmer granny from whom I purchase my direct-from-the-producer vegetables shared this recipe with me. She says it's the more luxurious version of standard daikon radish rice.
You could also reduce the amount of salt and put in a pickled plum instead.

The star of this dish is crimson core daikon radish. It looks like a turnip.

This is what it looks like sliced. It becomes red when it is fully ripe. I used something a bit more red this time.

Cut the daikon radish into fourths vertically, and cut again into fourths horizontally.

Slice that into 2-3 mm slices.

Wash the rice, pour in water as usual, add in salt, sake, and the crimson core daikon radish from Step 4, and switch on your rice cooking machine.

This is what the rice looks like cooked. The colors are quite pretty and resemble cherry blossom. I can't wait for the cherry blossoms to bloom in the spring.
