Ingredients

  1. pork loin
  2. 1center cut pork loin
  3. 1 smallonion diced
  4. 1 smallred pepper sliced
  5. 4 sliceprovolone
  6. 4 clovegarlic minced
  7. 1handfull of fresh spinach
  8. 2 tbspolive oil
  9. 1salt, pepper
  10. 1coarse grind onion and garlic
  11. 4feet butchers twine
  12. parmesan potato wedges
  13. 6 mediumchefs potatoes
  14. 2 tbspolive oil
  15. 1/2 cupgrated parmesan
  16. 1salt,, pepper
  17. 1garlic and onion powder
  18. 1Italian seasoning
  19. mixed veggies
  20. 1 bagfrozen veggies or whatever you prefer
  21. 1/2 stickbutter
  22. 1salt pepper

Steps

  1. 1

    pre heat oven to °375

  2. 2

    butterfly the pork loin

    use 1tbs of olive oil and saute onion peppers and garlic

  4. 4

    layer the pork with spinach then provolone then sauteed onion pepper and garlic

    role pork very tightly and tie off with twine

    season top and bottom with salt,pepper,garlic and onion

  7. 7

    place in the center of the oven and bake until the internal temp is °160

  8. 8

    meanwhile wedge the potatoes place in a bowl with olive oil salt pepper garlic onion and parmesan. mix well

  9. 9

    put potatoes flat on a sheet pan and place under the pork in the oven

  10. 10

    relax you have a while until you have to make your veggies :)

  11. 11

    when the temperature of the pork is °150 start the veggies.

    plate it up and enjoy:)
