Coconut Milk Rice

Coconut Milk rice is South Indian rice variety. Basmati rice is cooked with whole spices and coconut milk which makes it aromatic, mild in flavors with subtle taste of coconut. Coconut milk rice is simple and easy to prepare and can be paired with veg/ non-veg kurma.

Wash and soak basmati rice for 30 minutes. Take grated coconut in mixer jar, add water and extract coconut milk. Take coconut residue in mixer jar along with water and extract coconut milk again. Approximately it yields 1&1/2 cup coconut milk. Take extra 1&1/2 cup water for 1&1/2 cup rice.

In a pressure cooker heat oil. Add cashews and fry until golden. Add in whole spices and sauté for 30 seconds until aromatic.

Add in sliced onions and slit green chili. Sauté for a minute. Add ginger garlic paste and sauté until raw smell goes away.

Add in soaked and drained basmati rice and sauté for a minute. Add in coconut milk, water and salt.

Once it comes to boil. Close with pressure cooker lid and pressure cook for 1 whistle and switch off the flame. Wait until pressure settles down.

Open the lid, add in ghee, chopped coriander and mint leaves. Gently fluff up the rice.

Delicious coconut milk rice is ready to be served. Serve it veg/non-veg kurma. I have linked recipe of White mutton Kurma and Mixed veg kurma.
