Awesome side dish to have with wraps or with a BBQ
Steps

Lightly toast rice in some olive oil and garlic (approx 3-5 mins)

Add in half the water, all the tomato puree, and lime and soy sauce.
Cover pan and let simmer on low heat until liquid is almost completely absorbed. Stir every few mins. - 3
Add the rest of the water and salt and pepper, simmer on low until done.
