This is my own twist on classic rice pudding recipes.

Add all the ingredients to the bread maker in the order listed.

Set your bread maker to the jam setting and let it run for 1 hour and 20 minutes.

Depending on the type of rice you use, the texture may vary. I used parboiled rice and it turned out well but slightly firm, which I like. If you prefer it softer, let it rest in the bread maker without opening it for 30 minutes or more, depending on your preference.

Remove the pan, stir with a wooden spatula, take out the lemon or orange peel and the cinnamon stick, and portion the pudding into jars or glasses.

If you like, sprinkle ground cinnamon on top before serving.
